Latte art
Latte art is the practice of pouring textured milk into espresso to create patterns on the drink's surface — hearts, tulips, rosettas, and more complex designs. It's both a visual signal of quality and a functional test of milk steaming technique.
Latte art requires two prerequisites: well-textured microfoam milk (glossy, paint-like) and a fresh espresso shot with intact crema. Without both, even perfect pouring technique produces a flat surface or muddy design. Latte art begins long before the pour — at the steam wand.
The basic progression: center dot (just practice pouring control), heart (pour from height to mix, drop to surface to draw), tulip (alternating pours that create stacked shapes), rosetta (the standard test of barista skill — leaves of a fern pattern). More advanced patterns include swans, phoenixes, and free-pour portraits.
Latte art matters in specialty coffee for three reasons: it's a visible quality signal customers can see, it requires consistent milk technique (so it doubles as a training feedback loop), and it photographs well (social media drives traffic). Cafés with strong latte art often build local reputation around it.
